Perambalur rural women learn benefits of proper cooking

As part of the Nutrition Garden project, an initiative of the Reviving Green Revolution Cell (Regional Centre), a two-day village level training programme on dietary guidelines and proper cooking methods was organised in 30 villages in Veppur block of Perambalur district.

P. Vijayalakshmi, Home Scientist, Indian Council of Agricultural Research, conducted the workshop for rural women.

At this village-level training programme, she urged women to adopt proper cooking method and educated them on how vitamins were lost during washing of cut vegetables and improper cooking of foodstuffs. This was an eye-opener for a majority of women.

About 300 women from the Perambalur district participated and they were sensitized on present day need for consuming adequate vegetables, type of locally available vegetables with nutritional qualities, method of proper cooking so as to arrest or minimise the loss of vitamins and nutrients. As a part of this workshop, a demonstration on proper cooking methods was held and a variety of soups were prepared.

Referring to personal hygiene, the home scientist urged the women to observe good personal hygiene to maintain food safety. She emphasised the need to wash hands thoroughly before starting the preparation of food.

Dwelling on importance of vegetable consumption, the home scientist pointed out that vegetables provide phyto-chemicals and considerable health significance to the human body. “Among these, dietary fibre, antioxidants and other bio-active constituents require special mention. These special factors are required for delaying ageing and preventing the processes which lead to diseases such as cataract, cardio-vascular diseases and diabetes.” Vijayalakshmi said.

Also as part of the workshop, a few rural women made products from locally available vegetable. All these products were on display at the mini-exhibition that was open to public. A Booklet on Nutrition Garden authored by Dr. Indhumathi, Horticulturist working in Tamil Nadu Agricultural University, was distributed to all participants for guidance.
